Tahitian Marinated Fish

Serves 4-6

Ingredients:
 500 g fresh tuna
 2 tomatoes, sliced
 ½  cup lime juice
 ½  lime, sliced
 1 onion finely chopped
 ½  cucumber
 1 cup coconut milk
 parsley
 chives
 salt, pepper


Preparation: 
 Dice the fish into cubes, rinse with fresh water, drain and place in a large salad bowl.
 Sprinkle with salt then lemon juice.
 Cover and chill for 2 hours (or overnight)
 In another bowl, mix the sliced tomatoes, the finely sliced onion, the chopped parsley, chives, salt and pepper.
 Remove seeds from cucumber and cut into thin half-moons.
 Mix all the ingredients together well.
 Five minutes before serving, add the coconut milk.
 Serve chilled with 1/2 lemon slices, on a bed of lettuce, on individual plates or, why not, in a coconut shell!
